Four thousand bottles in a cellar carved into the limestone bedrock below the estate. The collection runs from local Provençal rosé to Grand Cru Burgundy, with a particular depth in the Rhône and southern Italy. The resident sommelier leads each tasting privately, composing a sequence around the guests' preferences — vertical, regional, or entirely guided by the sommelier's instinct.

Carved from the limestone bedrock below the estate, the cellar maintains a constant 12°C throughout the year without mechanical intervention.
